Sometimes you have to cook dinner with what you have around the house, and sometimes that dinner is delicious! Elizabeth and Anna enjoyed this delicious dinner in Maratea when their friend Giuseppe cooked pasta for them. Maybe they loved it because they had no expectations for this makeshift meal...or maybe they loved it because it's the perfect combination of peperoni cruschi and pancetta. Try this recipe and decide for yourself!
- 500 g strozzapretti pasta
- peperoni cruschi, slivered
- pancetta, diced
- 1 red onion, minced
- olive oil
- salt, as needed
- Sauté the onion in olive oil, and when it becomes a golden brown (but not burnt), add the pancetta. When the pancetta is almost ready, add the peperoni cruschi.
- Meanwhile, bring a pot of water to boil, adding salt to taste. When the water is boiling, add the pasta and cook for the time indicated on the packaging. Drain the pasta and add it to the pancetta and peperoni cruschi.
